Chef Subash’s love for cooking began in the mountainous villages of Nepal, where he learned traditional techniques from his mother and developed a deep respect for fresh, locally sourced ingredients. After earning a degree in Hotel & Catering Management in Kathmandu, he launched his career in prestigious Nepalese hotels, including the Hyatt and Crowne Plaza. His quest for knowledge took him to Dubai in 2009, where he worked under French master chefs at the Hyatt and Palazzo Versace, gaining invaluable experience in fine dining and mastering European culinary techniques.
Over the years, Chef Subash’s career expanded across Asia and Africa, where he led culinary teams and helped open restaurants, deepening his understanding of international cuisines. His work as a task force chef broadened his horizons and instilled a global perspective in his approach to cooking. In 2016, he moved to Australia’s Southern Highlands and became head events chef at Bendooley Estate, where he continued to refine his craft while exploring new flavors and techniques.
In 2023, Chef Subash realized his dream of opening MONACO Bowral, where he combines the elegance of French cuisine with the vibrant flavors of his Nepalese heritage. His dedication to authenticity, creativity, and quality ingredients shines through every dish, creating a unique and unforgettable dining experience. At MONACO, Chef Subash’s culinary journey comes full circle, blending tradition with global influences to offer a truly distinctive menu.
